I have been baking cookies for Gab. He is now 16 months old and loves eating with his fingers. That is why he loves cookies. He likes to hold it by himself and bites them with gusto. I got this recipe from allrecipes.com but made it with less sugar. This may taste bland for cookie lovers but I find it just perfect for Gab.
Soft Raisin Oatmeal Cookies
Ingredients
1 cup butter, softened
1 cup brown sugar
2 eggs
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 1/2 teaspoon ground cinnamon
3 cups quick cooking oats
1/2 cup sundried raisins
Makes 24 cookies.
Directions
- In a bowl, cream together butter and sugar. Beat in the eggs one at a time. Stir in vanilla.
- Combine the flour, baking soda, salt and cinnamon into the mixture.
- Mix in the oats and raisins. Cover and chill the dough for about 1 hour.
- Preheat the oven to 190 degress C.
- Grease the cookie sheets or you can use a cooking paper.
- Roll the dough into walnut size balls. Flatten each cookie into the sheets.
- Bake for 8 to 10 minutes in preheated oven.
- Slowly remove the cookies from the tray and allow cookies to cool.
Tips
- For sweeter taste, you can add 1 cup white sugar in step 1.
- Aside from raisins, you can also use nuts or even chocolate chips.
- Use 1 1/2 cups of all-purpose flour if you want the cookies to be firmer and crispier.
- You can skip chilling the dough for an hour but the dough will be a bit sticky when you shape them.
- If you let the cookies cool on the hot tray for a long time, the bottom side of the cookies might be burnt.
